Ligurian anchovies

Ingredients:

  • 1 lb fresh anchovies, cleaned and gutted
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 2 cloves of garlic, thinly sliced
  • 1/4 cup white wine
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Rinse the anchovies and pat dry with paper towels.
  2. Dust the anchovies with flour, shaking off any excess.
  3. Heat the olive oil in a pan over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
  4. Add the anchovies to the pan and cook for 2-3 minutes on each side until golden brown.
  5. Remove the anchovies from the pan and place them on a paper towel-lined plate to drain excess oil.
  6. In the same pan, add the white wine and bring to a simmer. Cook for 2-3 minutes until the wine has reduced by half.
  7. Return the anchovies to the pan and toss to coat in the wine sauce.
  8. Sprinkle chopped parsley over the anchovies and serve hot.

This dish is typically served as an appetizer, and goes well with crusty bread to dip in the sauce.
